The random restaurant I walked into is Taiyo No Tomato Men/太陽のトマト麵/太陽蕃茄拉麵 (name of the restaurant means sun's tomato noodles). It specializes in the fusion of Japanese ramen and Italian pasta.
When I took my first bite, I was so surprised by how delicious my noodles tasted. The noodles were made with soya milk (very chewy, love the texture) and the soup base was made with tomatoes from Italy (so rich in taste, and not sour at all).
I ordered the Egg Tomato Curry Ramen. But there are many choices. For the noodles, you can choose among thin noodles, a mix of thin and thick noodles, and thick noodles. I personally prefer thin noodles.
For the soup, you can choose among chicken soup, tomato soup, tomato and curry soup, and basil soup.

It's only in Japanese but I'm sure the staff at your hotel will be glad to direct you to a branch nearby.
Lucky for HongKongers, Taiyo No Tomato Men just opened a branch in Tseung Kwan O in 2014.
